I understand why high standard cuisine has to present some dishes to top notch restaurants, but I totally disagree with this video. Peruvian ceviche is way simpler than that, trust me.

That's not peruvian ceviche!!! That cheff sucks big time. DOES NOT THE WAY THEY DO IT IN PERU
